Ingredients:

  • 1 (15-ounce) can chickpeas, drained and rinsed (425g)
  • 1/2 cup rolled oats (50g)
  • 1/4 cup fresh parsley, chopped (15g)
  • 1/4 cup red onion, finely chopped (40g)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin (3g)
  • 1 teaspoon smoked paprika (3g)
  • Salt and pepper to taste
  • 2 tablespoons olive oil (30ml)
  • 4 whole wheat burger buns
  • Lettuce, tomato slices, or any desired toppings

Instructions:

  1. In a large mixing bowl, mash chickpeas with a fork or potato masher until mostly smooth but still chunky.
  2. Add oats, parsley, red onion, garlic, cumin, smoked paprika, salt, and pepper. Mix until well combined.
  3. Shape the mixture into 4 burger patties.
  4. Heat olive oil in a non-stick skillet over medium-high heat.
  5. Place the patties in the skillet, cooking for 5 minutes on each side or until golden brown and crispy.
  6. Toast the buns and stack with lettuce, tomato, and the chickpea patties.
