Ingredients:
- 1 (15-ounce) can chickpeas, drained and rinsed (425g)
- 1/2 cup rolled oats (50g)
- 1/4 cup fresh parsley, chopped (15g)
- 1/4 cup red onion, finely chopped (40g)
- 2 cloves garlic, minced
- 1 teaspoon ground cumin (3g)
- 1 teaspoon smoked paprika (3g)
- Salt and pepper to taste
- 2 tablespoons olive oil (30ml)
- 4 whole wheat burger buns
- Lettuce, tomato slices, or any desired toppings
Instructions:
- In a large mixing bowl, mash chickpeas with a fork or potato masher until mostly smooth but still chunky.
- Add oats, parsley, red onion, garlic, cumin, smoked paprika, salt, and pepper. Mix until well combined.
- Shape the mixture into 4 burger patties.
- Heat olive oil in a non-stick skillet over medium-high heat.
- Place the patties in the skillet, cooking for 5 minutes on each side or until golden brown and crispy.
- Toast the buns and stack with lettuce, tomato, and the chickpea patties.
