Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz / 170g each)
- 1 cup (100g) all-purpose flour
- 2 large eggs
- 1 cup (100g) breadcrumbs (preferably Italian-seasoned)
- ½ cup (50g) grated Parmesan cheese
- Salt and pepper, to taste
- 1 teaspoon dried oregano
- 2 cups (480ml) marinara sauce (store-bought or homemade)
- 1½ cups (170g) shredded mozzarella cheese
Instructions:
- Flatten chicken breasts to an even thickness using a meat mallet or rolling pin. Season both sides with salt, pepper, and dried oregano.
- In one shallow bowl, place flour; in a second bowl, beat the eggs; in a third bowl, mix breadcrumbs with grated Parmesan.
- Dredge each piece of chicken in flour, then dip in egg, and finally coat with breadcrumb mixture. Ensure an even coating.
- Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add breaded chicken and cook for 4-5 minutes per side until golden brown and cooked through.
- Pour marinara sauce over each piece of chicken, then sprinkle mozzarella on top.
- Cover the skillet and cook on low for an additional 3-5 minutes until cheese is melted and bubbly.
- Carefully transfer to plates and garnish with fresh basil if desired.
