Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz / 170g each)
  • 1 cup (100g) all-purpose flour
  • 2 large eggs
  • 1 cup (100g) breadcrumbs (preferably Italian-seasoned)
  • ½ cup (50g) grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 teaspoon dried oregano
  • 2 cups (480ml) marinara sauce (store-bought or homemade)
  • 1½ cups (170g) shredded mozzarella cheese

Instructions:

  1. Flatten chicken breasts to an even thickness using a meat mallet or rolling pin. Season both sides with salt, pepper, and dried oregano.
  2. In one shallow bowl, place flour; in a second bowl, beat the eggs; in a third bowl, mix breadcrumbs with grated Parmesan.
  3. Dredge each piece of chicken in flour, then dip in egg, and finally coat with breadcrumb mixture. Ensure an even coating.
  4. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add breaded chicken and cook for 4-5 minutes per side until golden brown and cooked through.
  5. Pour marinara sauce over each piece of chicken, then sprinkle mozzarella on top.
  6. Cover the skillet and cook on low for an additional 3-5 minutes until cheese is melted and bubbly.
  7. Carefully transfer to plates and garnish with fresh basil if desired.
