Ingredients:

  • 2 medium sweet potatoes (about 0.5 kg total)
  • 1 tablespoon olive oil (15 ml) (optional, for roasting)
  • Salt, to taste
  • Black pepper, to taste
  • ¼ cup Greek yogurt (60 g) or sour cream (optional for topping)
  • Fresh herbs (e.g., chopped chives, parsley, or cilantro) for garnish

Instructions:

  1. Scrub the sweet potatoes under running water to remove any dirt.
  2. Use a fork to pierce the sweet potatoes all over (about 6-8 times) to allow steam to escape.
  3. Place the sweet potatoes on a microwave-safe plate and microwave on high for 5 minutes.
  4. Check for doneness and continue to cook in 1-minute increments until soft.
  5. If using, brush the sweet potatoes with olive oil and sprinkle with salt and pepper before serving.
  6. Split the sweet potatoes open and fluff the insides with a fork, then top with Greek yogurt and garnish with fresh herbs.
