- ¼ cup Greek yogurt (60 g) or sour cream (optional for topping)
- Fresh herbs (e.g., chopped chives, parsley, or cilantro) for garnish
Instructions:
- Scrub the sweet potatoes under running water to remove any dirt.
- Use a fork to pierce the sweet potatoes all over (about 6-8 times) to allow steam to escape.
- Place the sweet potatoes on a microwave-safe plate and microwave on high for 5 minutes.
- Check for doneness and continue to cook in 1-minute increments until soft.
- If using, brush the sweet potatoes with olive oil and sprinkle with salt and pepper before serving.
- Split the sweet potatoes open and fluff the insides with a fork, then top with Greek yogurt and garnish with fresh herbs.
