Ingredients:
- 2 lbs chicken wings, separated
- 1 cup buttermilk
- 1 tablespoon hot sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 teaspoon kosher salt
- 2 cups all-purpose flour
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 teaspoon kosher salt
- Vegetable or peanut oil, for frying
Instructions:
- In a large bowl, combine buttermilk, hot sauce, Worcestershire sauce, garlic powder, onion powder, pepper, and salt. Add chicken wings and marinate for at least 2 hours, or overnight.
- In a shallow dish, whisk together flour, paprika, garlic powder, onion powder, pepper, and salt.
- Heat oil to 275°F (135°C). Dredge each wing in flour mixture, shaking off excess. Fry in batches for 8-10 minutes, until cooked through but pale.
- Remove wings and place on a wire rack to cool for 15-20 minutes.
- Increase oil temperature to 350°F (175°C). Fry wings in batches for 3-5 minutes, until golden brown and crispy.
- Remove wings and place on a wire rack to drain excess oil. Serve immediately.
