Ingredients:

  • 1 pound Ground Beef (80/20 blend)
  • 1 teaspoon Coarse Sea Salt
  • 1/2 teaspoon Freshly Cracked Black Pepper
  • 1 teaspoon Worcestershire Sauce
  • 1/2 teaspoon Garlic Powder (optional)
  • 4 slices Cheese Slices (American, mature Cheddar, or Monterey Jack)
  • 4 Brioche or Potato Buns
  • 1 tablespoon Unsalted Butter (softened)
  • Toppings, as desired (Lettuce, tomato, red onion, pickles)
  • Sauce, as desired (Ketchup, mustard, or 'special sauce')

Instructions:

  1. Prepare and Shape the Patties: In a mixing bowl, gently combine the ground beef, salt, pepper, Worcestershire sauce, and garlic powder (if using). Do not overmix; stop as soon as the seasoning is incorporated.
  2. Divide and Shape: Divide the meat mixture into four equal portions (approximately 4 oz / 113g each). Gently form them into patties slightly wider than your buns.
  3. Create the Divot: Using your thumb, press a distinct dimple or divot into the centre of each patty. This stops them from puffing up into balls and ensures they cook flat and evenly.
  4. Preheat and Load the Air Fryer: Preheat the air fryer to 375°F (190°C) for 3 minutes. Line the air fryer basket with a perforated piece of parchment paper or spray lightly with cooking oil. Place the patties into the basket, ensuring they do not touch (work in batches if necessary, usually 2 at a time).
  5. Cook the Burgers: Cook the patties for 5 minutes at 375°F (190°C). Flip the burgers using tongs.
  6. Final Cook Time and Temperature Check: Cook for an additional 3–5 minutes. Check the internal temperature using a thermometer. Aim for 160°F (71°C) for medium-well or 165°F (74°C) for well-done.
  7. Add Cheese and Toast Buns: Place a slice of cheese on top of each patty immediately after reaching the desired temperature. Return the patties to the air fryer for 60–90 seconds to allow the cheese to perfectly melt and cling.
  8. Toast Buns: While the cheese melts, quickly spread softened butter on the cut sides of the buns. Toast the buns either alongside the burgers for the final 60 seconds, or separately for 2 minutes at 350°F (175°C).
  9. Assemble and Serve: Remove the cooked patties and allow them to rest on a clean plate for 2 minutes. Build the burgers with your desired sauces and toppings (lettuce goes on the bottom bun to protect it from the heat). Serve straight away.
