Ingredients:
- 2 cups (300g) fresh pomegranate arils
- 1/2 cup (75g) red onion, finely minced
- 1/4 cup (15g) fresh cilantro or flat-leaf parsley, finely chopped
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5ml) apple cider vinegar
- 1 tbsp (21g) maple syrup
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
- 1 pinch (0.5g) red pepper flakes
Instructions:
- Finely mince the red onion until the pieces are uniform and small. Finely chop your chosen herb (cilantro or parsley) until it is a fine confetti.
- In a large mixing bowl, whisk together the lemon juice, apple cider vinegar, maple syrup, salt, pepper, and red pepper flakes until the syrup is fully integrated and the salt has dissolved.
- Add the pomegranate arils and minced onion to the bowl. Using a silicone spatula, gently fold the ingredients together to coat the arils without bruising the fruit.
- Fold in the chopped herbs last to maintain their bright green color.
