Ingredients:

  • 2 cups (300g) fresh pomegranate arils
  • 1/2 cup (75g) red onion, finely minced
  • 1/4 cup (15g) fresh cilantro or flat-leaf parsley, finely chopped
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5ml) apple cider vinegar
  • 1 tbsp (21g) maple syrup
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper
  • 1 pinch (0.5g) red pepper flakes

Instructions:

  1. Finely mince the red onion until the pieces are uniform and small. Finely chop your chosen herb (cilantro or parsley) until it is a fine confetti.
  2. In a large mixing bowl, whisk together the lemon juice, apple cider vinegar, maple syrup, salt, pepper, and red pepper flakes until the syrup is fully integrated and the salt has dissolved.
  3. Add the pomegranate arils and minced onion to the bowl. Using a silicone spatula, gently fold the ingredients together to coat the arils without bruising the fruit.
  4. Fold in the chopped herbs last to maintain their bright green color.
