Ingredients:

  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 2 cups (480ml) fresh pomegranate juice (strained)
  • 1 cup (240ml) freshly squeezed lemon juice
  • 3 cups (720ml) chilled filtered water

Instructions:

  1. Combine the sugar and 1 cup (240ml) of water in a small saucepan over medium heat. Stir constantly until the liquid turns clear and the sugar is completely dissolved. Remove from heat and let it cool for 5-10 minutes.
  2. Squeeze your lemons using a juicer to reach 1 cup (240ml). If using a fresh pomegranate, blend the seeds and pass the mixture through a fine-mesh strainer to obtain 2 cups (480ml) of smooth, seedless juice.
  3. Pour the cooled simple syrup into the pitcher first, followed by the fresh lemon juice and pomegranate juice. Stir vigorously for 30 seconds. Finally, pour in the 3 cups (720ml) of chilled water. Stir once more until the color is a consistent, deep ruby red.
