Ingredients:
- 1 pound (450g) Italian sausage, removed from casings (mild or spicy, your call!)
- 1 medium onion, chopped (about 1 cup)
- 2 cloves garlic, minced
- 1 (28 ounce/794g) can crushed tomatoes
- 1 (15 ounce/425g) can tomato sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1 package (10-12 ounces/280-340g) refrigerated biscuit dough (the flaky kind works best)
- 3 cups (300g) shredded mozzarella cheese, divided
- 1/2 cup (50g) grated Parmesan cheese
- Your favorite pizza toppings! (e.g., pepperoni, mushrooms, bell peppers, olives, cooked ham)
Instructions:
- Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- Brown the Italian sausage in a large skillet over medium heat, breaking it up with a spoon. Drain off any excess grease.
- Add the chopped onion and minced garlic to the skillet with the sausage. Cook until the onion is softened, about 5 minutes.
- Stir in the crushed tomatoes, tomato sauce, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Pour half of the sauce mixture into the prepared baking dish. Arrange half of the biscuit dough on top of the sauce, slightly overlapping. Sprinkle with 1 cup of mozzarella cheese and half of the Parmesan cheese. Add your desired pizza toppings.
- Pour the remaining sauce mixture over the toppings. Arrange the remaining biscuit dough on top.
- Sprinkle with the remaining mozzarella and Parmesan cheese.
- Bake in the preheated oven for 30-35 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before slicing and serving.
