Ingredients:

  • 1 pound (450g) Italian sausage, removed from casings (mild or spicy, your call!)
  • 1 medium onion, chopped (about 1 cup)
  • 2 cloves garlic, minced
  • 1 (28 ounce/794g) can crushed tomatoes
  • 1 (15 ounce/425g) can tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 package (10-12 ounces/280-340g) refrigerated biscuit dough (the flaky kind works best)
  • 3 cups (300g) shredded mozzarella cheese, divided
  • 1/2 cup (50g) grated Parmesan cheese
  • Your favorite pizza toppings! (e.g., pepperoni, mushrooms, bell peppers, olives, cooked ham)

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Brown the Italian sausage in a large skillet over medium heat, breaking it up with a spoon. Drain off any excess grease.
  3. Add the chopped onion and minced garlic to the skillet with the sausage. Cook until the onion is softened, about 5 minutes.
  4. Stir in the crushed tomatoes, tomato sauce, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  5. Pour half of the sauce mixture into the prepared baking dish. Arrange half of the biscuit dough on top of the sauce, slightly overlapping. Sprinkle with 1 cup of mozzarella cheese and half of the Parmesan cheese. Add your desired pizza toppings.
  6. Pour the remaining sauce mixture over the toppings. Arrange the remaining biscuit dough on top.
  7. Sprinkle with the remaining mozzarella and Parmesan cheese.
  8. Bake in the preheated oven for 30-35 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
  9. Let the casserole cool for a few minutes before slicing and serving.
