Ingredients:

  • 5 (5-ounce) cans tuna in water, thoroughly drained
  • 1 cup full-fat mayonnaise
  • 2 medium stalks celery, finely chopped
  • 1/4 cup red onion, very finely minced
  • 1/4 cup sweet pickle relish
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions:

  1. Open the cans, drain the tuna very thoroughly using a sieve, and place the drained tuna into a large mixing bowl.
  2. Using a fork, gently flake the tuna until it reaches your desired consistency.
  3. Finely chop the celery and red onion. Measure out the relish, mustard, and parsley.
  4. Add the mayonnaise, sweet pickle relish, Dijon mustard, and fresh lemon juice directly to the bowl with the tuna.
  5. Incorporate the chopped celery, minced red onion, and fresh parsley into the mixture.
  6. Sprinkle in the salt and pepper. Gently fold all ingredients together until they are just combined, taking care not to overmix.
  7. Taste a small spoonful and adjust seasoning: add more lemon for tang, more relish for sweetness, or more salt/pepper as needed.
  8. Cover the bowl tightly with cling film and refrigerate for at least 30 minutes to allow the flavors to meld before serving.
