Ingredients:

  • 1 cup (100g) old-fashioned rolled oats
  • 1/2 cup (128g) creamy peanut butter
  • 1/3 cup (110g) honey
  • 1/2 cup (60g) vanilla protein powder
  • 1/2 cup (85g) mini semi-sweet chocolate chips
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) fine sea salt
  • 2 tbsp (15g) chia seeds

Instructions:

  1. In a large bowl, combine the room-temperature peanut butter, honey, and vanilla extract. Stir vigorously with a spatula until the mixture is smooth and glossy.
  2. Sift in the protein powder and salt to avoid clumps. Fold in the rolled oats, chia seeds, and chocolate chips.
  3. Mix until the dough is heavy and pulls away from the sides of the bowl. If the mixture feels too wet, let it sit for 5 minutes to allow the oats to hydrate.
  4. Scoop about 1 tablespoon of dough and roll between your palms to form a smooth, spherical ball.
  5. Place balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes until the exterior feels firm and no longer tacky.
