Ingredients:
- 20 oz canned pineapple tidbits, drained
- 1/4 cup pineapple juice
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 tbsp all-purpose flour
- 1 tsp vanilla extract
- 1/2 cup unsalted butter, melted
- 1/2 cup light brown sugar
- 1 cup chopped pecans
- 1/4 tsp ground cinnamon
Instructions:
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
- Stir in the all-purpose flour and vanilla extract.
- Fold in the drained pineapple tidbits and the reserved 1/4 cup of pineapple juice. Mix until the fruit is evenly coated.
- In a separate small bowl, combine melted butter, brown sugar, cinnamon, and chopped pecans. Stir until the nuts are fully glazed.
- Spread the pineapple base into a 9x9 inch baking dish and evenly distribute the pecan mixture over the top, pressing lightly with a spatula.
- Bake in a preheated oven for approximately 30 minutes until the edges are bubbling and the topping is deep golden brown.
- Remove from the oven and let it rest for 5 minutes to allow the structure to set.
