Ingredients:

  • 20 oz canned pineapple tidbits, drained
  • 1/4 cup pineapple juice
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1/2 cup light brown sugar
  • 1 cup chopped pecans
  • 1/4 tsp ground cinnamon

Instructions:

  1. In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
  2. Stir in the all-purpose flour and vanilla extract.
  3. Fold in the drained pineapple tidbits and the reserved 1/4 cup of pineapple juice. Mix until the fruit is evenly coated.
  4. In a separate small bowl, combine melted butter, brown sugar, cinnamon, and chopped pecans. Stir until the nuts are fully glazed.
  5. Spread the pineapple base into a 9x9 inch baking dish and evenly distribute the pecan mixture over the top, pressing lightly with a spatula.
  6. Bake in a preheated oven for approximately 30 minutes until the edges are bubbling and the topping is deep golden brown.
  7. Remove from the oven and let it rest for 5 minutes to allow the structure to set.
