Ingredients:
- 1/2 cup (120ml) Prepared Basil Pesto
- 1/4 cup (60ml) Extra Virgin Olive Oil
- 2 tablespoons (30ml) Lemon Juice, freshly squeezed
- 1 tablespoon (15ml) White Wine Vinegar
- 1 tablespoon (15ml) Water
- 1 teaspoon (5ml) Honey
- 1/4 teaspoon (1.2ml) Garlic Powder
- 1/4 teaspoon (1.2ml) Salt
- 1/8 teaspoon (0.6ml) Black Pepper, freshly ground
Instructions:
- In a food processor or blender, combine the prepared pesto, olive oil, lemon juice, white wine vinegar, water, honey, garlic powder, salt, and pepper.
- Blend until smooth and emulsified.
- Taste the pesto salad dressing and adjust the seasoning as needed. Add more salt, pepper, lemon juice, or honey to your liking. If it's too thick, add a little more water, 1 teaspoon at a time, until you reach the desired consistency.
- Transfer the pesto salad dressing to an airtight container and store it in the refrigerator.
