Ingredients:

  • 1/2 cup (120ml) Prepared Basil Pesto
  • 1/4 cup (60ml) Extra Virgin Olive Oil
  • 2 tablespoons (30ml) Lemon Juice, freshly squeezed
  • 1 tablespoon (15ml) White Wine Vinegar
  • 1 tablespoon (15ml) Water
  • 1 teaspoon (5ml) Honey
  • 1/4 teaspoon (1.2ml) Garlic Powder
  • 1/4 teaspoon (1.2ml) Salt
  • 1/8 teaspoon (0.6ml) Black Pepper, freshly ground

Instructions:

  1. In a food processor or blender, combine the prepared pesto, olive oil, lemon juice, white wine vinegar, water, honey, garlic powder, salt, and pepper.
  2. Blend until smooth and emulsified.
  3. Taste the pesto salad dressing and adjust the seasoning as needed. Add more salt, pepper, lemon juice, or honey to your liking. If it's too thick, add a little more water, 1 teaspoon at a time, until you reach the desired consistency.
  4. Transfer the pesto salad dressing to an airtight container and store it in the refrigerator.
