Ingredients:
- 4 medium sweet potatoes (about 8-10 ounces/ 225-285g each), scrubbed clean
- 1 tablespoon olive oil (15 ml)
- ½ teaspoon kosher salt (3g)
- ¼ teaspoon black pepper (optional) (1g)
Instructions:
- Preheat your oven to 400°F (200°C).
- Scrub the sweet potatoes thoroughly under cold water. Pat them dry.
- Use a fork to pierce each sweet potato several times all over.
- Rub the sweet potatoes with olive oil, then sprinkle with salt and pepper. Ensure they are evenly coated.
- Place the sweet potatoes directly on the baking sheet. Bake for 45-75 minutes, or until a fork easily pierces the center and the internal temperature reaches 205-215°F (96-102°C).
- Remove from oven and let cool slightly before handling. Serve hot with your favourite toppings.
