Ingredients:

  • 4 medium sweet potatoes (about 8-10 ounces/ 225-285g each), scrubbed clean
  • 1 tablespoon olive oil (15 ml)
  • ½ teaspoon kosher salt (3g)
  • ¼ teaspoon black pepper (optional) (1g)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the sweet potatoes thoroughly under cold water. Pat them dry.
  3. Use a fork to pierce each sweet potato several times all over.
  4. Rub the sweet potatoes with olive oil, then sprinkle with salt and pepper. Ensure they are evenly coated.
  5. Place the sweet potatoes directly on the baking sheet. Bake for 45-75 minutes, or until a fork easily pierces the center and the internal temperature reaches 205-215°F (96-102°C).
  6. Remove from oven and let cool slightly before handling. Serve hot with your favourite toppings.
