Ingredients:
- 4 medium sweet potatoes (8-10 ounces each)
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Instructions:
- Preheat oven to 400°F (200°C).
- Wash and dry the sweet potatoes. Pierce each potato several times with a fork.
- Drizzle sweet potatoes with olive oil, rubbing to coat evenly. Sprinkle with salt and pepper.
- Place sweet potatoes directly on the baking sheet. Bake for 45-75 minutes, or until easily pierced with a fork and the skin is slightly wrinkled.
- Test for doneness by squeezing the potato gently. It should yield easily. Internal temperature should reach 205-215°F (96-102°C).
- Let cool slightly before handling. Serve whole, sliced open, or mashed.
