Ingredients:

  • 1 large head (approx. 450 g / 1 lb) Fresh Broccoli, cut into even florets
  • 2 Tbsp (30 ml) Cold Water
  • 1 Tbsp (15 g) Unsalted Butter (or high-quality olive oil for dairy-free)
  • ½ tsp Fine Sea Salt, or to taste
  • ¼ tsp Freshly Ground Black Pepper
  • Optional: 1 small clove Garlic, minced
  • Optional: Zest of ½ Lemon

Instructions:

  1. Rinse the broccoli head thoroughly under cold water. Cut the crown into medium-sized florets (about 1–1.5 inches wide), ensuring uniformity. Place the prepared florets into a large microwave-safe bowl.
  2. Pour the 2 Tbsp (30 ml) of cold water directly over the broccoli florets. Cover the bowl tightly with a microwave-safe lid, plate, or tightly secured cling film (venting a tiny corner if using film). This traps the steam created by the water.
  3. Cook the covered broccoli on HIGH (100% power) for 2 to 3 minutes, depending on your microwave wattage and desired texture. Carefully remove the bowl from the microwave (use oven mitts). Crucially, leave the cover on and allow the broccoli to rest for 2 minutes. The residual heat will finish the cooking process gently.
  4. Carefully remove the lid (be cautious of escaping steam). Transfer the broccoli to a colander and drain off any excess water instantly. Return the drained broccoli to the serving bowl. Toss immediately with butter (or oil), sea salt, pepper, and any optional flavourings (garlic, lemon zest). Serve immediately while hot.
