Ingredients:
- 1 cup (240g) creamy peanut butter
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 teaspoon (5g) vanilla extract
- 1 teaspoon (5g) baking soda
- ½ teaspoon (2g) salt
- 1 cup (125g) all-purpose flour
Instructions:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the peanut butter and sugar until smooth. Add the egg and vanilla, and mix until thoroughly combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- For best results, cover the dough and chill in the fridge for 30 minutes.
- Using a cookie scoop or tablespoons, portion out the dough onto the prepared baking sheets, leaving space between each cookie.
- Gently press each cookie with a fork in a crisscross pattern.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden-brown.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
