Ingredients:

  • 1 cup (240g) creamy peanut butter
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 teaspoon (5g) vanilla extract
  • 1 teaspoon (5g) baking soda
  • ½ teaspoon (2g) salt
  • 1 cup (125g) all-purpose flour

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the peanut butter and sugar until smooth. Add the egg and vanilla, and mix until thoroughly combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. For best results, cover the dough and chill in the fridge for 30 minutes.
  5. Using a cookie scoop or tablespoons, portion out the dough onto the prepared baking sheets, leaving space between each cookie.
  6. Gently press each cookie with a fork in a crisscross pattern.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden-brown.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
