Ingredients:
- 3 large overripe bananas, mashed (300g)
- 1/2 cup creamy peanut butter (125g)
- 1/2 cup light brown sugar, packed (100g)
- 1 large egg (50g)
- 1 tsp vanilla extract (5ml)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 1/2 tsp ground cinnamon (2g)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- Mash the bananas in a large bowl with a fork until they reach a smooth, porridge like consistency.
- Stir in the peanut butter, brown sugar, egg, and vanilla. Whisk until the mixture is smooth and the sugar has mostly dissolved.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gently fold the dry ingredients into the wet batter using a spatula. Stop the moment no streaks of flour remain. Note: Overmixing leads to a tough, rubbery loaf.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Place in the center rack of the oven.
- Bake for 50–60 minutes until the top is a deep mahogany color and a toothpick inserted into the center comes out clean.
