Ingredients:
- 6 large eggs
- 1/3 cup mayonnaise
- 1 tbsp yellow mustard
- 2 tbsp sweet pickle relish
- 1/2 tsp salt
- 1/4 tsp black pepper
- paprika for dusting
Instructions:
- Place eggs in a large pot and cover with cold water. Bring to a rolling boil over medium-high heat.
- As soon as the water hits a boil, remove the pot from the heat and cover with a lid. Let the eggs sit in the hot water for 10 minutes.
- Drain the hot water and immediately plunge the eggs into an ice bath for 5 minutes.
- Gently crack the shells and peel under cool running water. Slice each egg lengthwise.
- Scoop the yolks into a mixing bowl and mash them with a fork until they reach a fine, sandy consistency.
- Fold in the mayonnaise, mustard, relish, salt, and pepper. Stir vigorously until the mixture is velvety.
- Spoon the mixture into the hollowed egg whites or use a piping bag for a polished look.
- Dust the tops with a pinch of paprika.
