Ingredients:

  • 6 large eggs
  • 1/3 cup mayonnaise
  • 1 tbsp yellow mustard
  • 2 tbsp sweet pickle relish
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • paprika for dusting

Instructions:

  1. Place eggs in a large pot and cover with cold water. Bring to a rolling boil over medium-high heat.
  2. As soon as the water hits a boil, remove the pot from the heat and cover with a lid. Let the eggs sit in the hot water for 10 minutes.
  3. Drain the hot water and immediately plunge the eggs into an ice bath for 5 minutes.
  4. Gently crack the shells and peel under cool running water. Slice each egg lengthwise.
  5. Scoop the yolks into a mixing bowl and mash them with a fork until they reach a fine, sandy consistency.
  6. Fold in the mayonnaise, mustard, relish, salt, and pepper. Stir vigorously until the mixture is velvety.
  7. Spoon the mixture into the hollowed egg whites or use a piping bag for a polished look.
  8. Dust the tops with a pinch of paprika.
