Ingredients:
- 1 pound (450g) of carrots, peeled and cut into 1-inch pieces
- 3 tablespoons (45ml) of olive oil
- 3 cloves of garlic, minced
- 1/3 cup (40g) of grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons (30ml) of fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 425°F (220°C).
- Peel and cut the carrots into even 1-inch pieces to ensure uniform cooking.
- In a mixing bowl, combine the olive oil, minced garlic, salt, and black pepper. Add the carrot pieces, tossing to coat evenly.
- Spread the coated carrots evenly on a baking sheet in a single layer. Roast in the preheated oven for 20 minutes.
- After 20 minutes, remove the baking sheet and sprinkle the grated Parmesan over the carrots. Return to the oven for an additional 5 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving and enjoy!
