Ingredients:

  • 1 pound (450g) of carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons (45ml) of olive oil
  • 3 cloves of garlic, minced
  • 1/3 cup (40g) of grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons (30ml) of fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the carrots into even 1-inch pieces to ensure uniform cooking.
  3. In a mixing bowl, combine the olive oil, minced garlic, salt, and black pepper. Add the carrot pieces, tossing to coat evenly.
  4. Spread the coated carrots evenly on a baking sheet in a single layer. Roast in the preheated oven for 20 minutes.
  5. After 20 minutes, remove the baking sheet and sprinkle the grated Parmesan over the carrots. Return to the oven for an additional 5 minutes, or until the cheese is bubbly and golden.
  6. Garnish with fresh parsley before serving and enjoy!
