Ingredients:

  • 1 cup (125g) all-purpose flour, sifted
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/2 cups (360ml) milk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons (30g) unsalted butter, melted, plus more for greasing the pan
  • 1 teaspoon vanilla extract (optional)
  • Powdered sugar (for serving)
  • Maple syrup (for serving)
  • Lemon wedges (for serving)
  • Fresh fruit (berries, apples, bananas) (for serving)
  • Bacon crumbles (for serving)
  • Nutella (for serving)

Instructions:

  1. In a large bowl, whisk together the sifted flour, salt, and sugar until well combined.
  2. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract (if using).
  3. Gradually pour the wet ingredients into the dry ingredients, whisking continuously until just combined. Be careful not to overmix – a few small lumps are okay.
  4. Heat a 9-10 inch non-stick skillet or crepe pan over medium heat. Add a small amount of butter to grease the pan.
  5. Pour 1/4 cup of batter onto the hot skillet. Immediately swirl the pan to evenly coat the bottom with a thin layer of batter.
  6. Cook for 2-3 minutes, or until the edges are golden brown and the crepe easily releases from the pan.
  7. Carefully flip the crepe with a spatula and cook for another 1-2 minutes, or until the second side is lightly golden brown.
  8. Transfer the cooked crepe to a plate and cover with foil to keep warm while you cook the remaining batter.
  9. Serve the pannenkoeken warm with your favorite toppings.
