Ingredients:
- 1 cup (125g) all-purpose flour, sifted

- 1 tablespoon granulated sugar
- 1 1/2 cups (360ml) milk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons (30g) unsalted butter, melted, plus more for greasing the pan
- 1 teaspoon vanilla extract (optional)
- Powdered sugar (for serving)
- Maple syrup (for serving)
- Lemon wedges (for serving)
- Fresh fruit (berries, apples, bananas) (for serving)
- Bacon crumbles (for serving)

Instructions:
- In a large bowl, whisk together the sifted flour, salt, and sugar until well combined.
- In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract (if using).
- Gradually pour the wet ingredients into the dry ingredients, whisking continuously until just combined. Be careful not to overmix – a few small lumps are okay.
- Heat a 9-10 inch non-stick skillet or crepe pan over medium heat. Add a small amount of butter to grease the pan.
- Pour 1/4 cup of batter onto the hot skillet. Immediately swirl the pan to evenly coat the bottom with a thin layer of batter.
- Cook for 2-3 minutes, or until the edges are golden brown and the crepe easily releases from the pan.
- Carefully flip the crepe with a spatula and cook for another 1-2 minutes, or until the second side is lightly golden brown.
- Transfer the cooked crepe to a plate and cover with foil to keep warm while you cook the remaining batter.
- Serve the pannenkoeken warm with your favorite toppings.
