Ingredients:

  • 1 lb fresh broccoli florets
  • 2 tbsp extra-virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/4 cup finely grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1 pinch red pepper flakes

Instructions:

  1. Wash the broccoli thoroughly and pat it completely dry with a kitchen towel. Cut the head into bite-sized pieces.
  2. In a large bowl, toss the florets with the olive oil, salt, and pepper. Stir in the garlic powder, red pepper flakes, and half of the Parmesan cheese.
  3. Spread the broccoli onto a rimmed sheet pan in a single layer, leaving space between the florets to ensure they roast rather than steam.
  4. Bake at 400°F (200°C) for 15–20 minutes until the edges are deep brown and the stalks are fork-tender.
  5. Sprinkle the remaining Parmesan over the top during the last 2 minutes of cooking for a melted, golden crust.
