Ingredients:
- 1 lb fresh snow peas, stringed and trimmed
- 1 tbsp fresh ginger, grated into a paste
- 2 cloves garlic, sliced into paper-thin chips
- 1 tbsp neutral oil (grapeseed or avocado oil)
- 1 tbsp orange zest
- 2 tbsp fresh orange juice
- 1 tbsp soy sauce
- 2 tsp toasted sesame oil
- 1 tsp honey
- 1 tbsp toasted sesame seeds
- 1/2 tsp red pepper flakes
- 2 green onions, thinly sliced
Instructions:
- Pinch the stem end of each snow pea and pull downward to remove the fibrous string. Pat the peas completely dry with paper towels to ensure a proper sear.
- In a small bowl, whisk together the orange zest, orange juice, soy sauce, and honey to create the glaze base.
- Heat the neutral oil in a large carbon steel wok or 12-inch cast-iron skillet over high heat until shimmering but not smoking.
- Add the snow peas, ginger, and garlic chips to the pan. Toss aggressively for 2-3 minutes until the peas are blistered and bright green.
- Pour the orange glaze over the peas and toss for 30-60 seconds until the liquid emulsifies and coats the vegetables.
- Remove from heat immediately. Stir in the toasted sesame oil, sesame seeds, red pepper flakes, and sliced green onions. Serve hot.
