Ingredients:

  • 1 lb fresh snow peas, stringed and trimmed
  • 1 tbsp fresh ginger, grated into a paste
  • 2 cloves garlic, sliced into paper-thin chips
  • 1 tbsp neutral oil (grapeseed or avocado oil)
  • 1 tbsp orange zest
  • 2 tbsp fresh orange juice
  • 1 tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 1 tsp honey
  • 1 tbsp toasted sesame seeds
  • 1/2 tsp red pepper flakes
  • 2 green onions, thinly sliced

Instructions:

  1. Pinch the stem end of each snow pea and pull downward to remove the fibrous string. Pat the peas completely dry with paper towels to ensure a proper sear.
  2. In a small bowl, whisk together the orange zest, orange juice, soy sauce, and honey to create the glaze base.
  3. Heat the neutral oil in a large carbon steel wok or 12-inch cast-iron skillet over high heat until shimmering but not smoking.
  4. Add the snow peas, ginger, and garlic chips to the pan. Toss aggressively for 2-3 minutes until the peas are blistered and bright green.
  5. Pour the orange glaze over the peas and toss for 30-60 seconds until the liquid emulsifies and coats the vegetables.
  6. Remove from heat immediately. Stir in the toasted sesame oil, sesame seeds, red pepper flakes, and sliced green onions. Serve hot.
