Ingredients:
- 6 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 package (12 oz or 340 g) stuffing mix (any variety)
- 2 cups (480 ml) low-sodium chicken broth
- 1 cup (150 g) celery, finely chopped
- 1 cup (150 g) onion, diced
- ½ cup (75 g) unsalted butter (1 stick), melted
- 1 teaspoon dried thyme
- 1 cup (100 g) shredded cheddar cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, garlic powder, and onion powder.
- In a large bowl, combine stuffing mix, chicken broth, chopped celery, diced onion, melted butter, and thyme. Mix until well combined.
- Spread the prepared stuffing mixture evenly in the bottom of the baking dish. Place the seasoned chicken breasts on top.
- Cover with aluminum foil and bake for 30 minutes. Remove the foil, sprinkle cheese on top if using, and bake uncovered for an additional 10 minutes.
- Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley.
