Ingredients:

  • 6 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 package (12 oz or 340 g) stuffing mix (any variety)
  • 2 cups (480 ml) low-sodium chicken broth
  • 1 cup (150 g) celery, finely chopped
  • 1 cup (150 g) onion, diced
  • ½ cup (75 g) unsalted butter (1 stick), melted
  • 1 teaspoon dried thyme
  • 1 cup (100 g) shredded cheddar cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. In a large bowl, combine stuffing mix, chicken broth, chopped celery, diced onion, melted butter, and thyme. Mix until well combined.
  4. Spread the prepared stuffing mixture evenly in the bottom of the baking dish. Place the seasoned chicken breasts on top.
  5. Cover with aluminum foil and bake for 30 minutes. Remove the foil, sprinkle cheese on top if using, and bake uncovered for an additional 10 minutes.
  6. Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley.
