Ingredients:
- 3 large (340g) overripe bananas, mashed
- 1/2 cup (113g) unsalted butter, melted and cooled slightly
- 3/4 cup (150g) light brown sugar, packed
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/4 tsp (1.5g) salt
Instructions:
- In a large mixing bowl, mash the overripe bananas until virtually smooth.
- Stir in the melted butter and brown sugar until the mixture looks velvety.
- Whisk in the egg and vanilla extract until the batter is glossy and fully integrated.
- Sprinkle the baking soda and salt directly over the wet mixture and stir.
- Add the flour and use a spatula to fold it into the batter just until no white streaks remain; do not over-mix.
- Divide the batter evenly among 12 lined muffin tins, filling each about 3/4 full.
- Bake in a preheated oven at 375°F (190°C) for 18–22 minutes.
- Remove muffins when the tops are deep mahogany-brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
