Ingredients:

  • 3 large (340g) overripe bananas, mashed
  • 1/2 cup (113g) unsalted butter, melted and cooled slightly
  • 3/4 cup (150g) light brown sugar, packed
  • 1 large (50g) egg, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/4 tsp (1.5g) salt

Instructions:

  1. In a large mixing bowl, mash the overripe bananas until virtually smooth.
  2. Stir in the melted butter and brown sugar until the mixture looks velvety.
  3. Whisk in the egg and vanilla extract until the batter is glossy and fully integrated.
  4. Sprinkle the baking soda and salt directly over the wet mixture and stir.
  5. Add the flour and use a spatula to fold it into the batter just until no white streaks remain; do not over-mix.
  6. Divide the batter evenly among 12 lined muffin tins, filling each about 3/4 full.
  7. Bake in a preheated oven at 375°F (190°C) for 18–22 minutes.
  8. Remove muffins when the tops are deep mahogany-brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
