Ingredients:
- 1.5 cups (225g) pitted green olives, roughly chopped
- 0.75 cup (100g) raw walnut halves, roughly chopped
- 2 cloves (6g) garlic, minced finely
- 0.25 cup (15g) fresh parsley, finely chopped
- 3 tbsp (45ml) pomegranate molasses
- 2 tbsp (30ml) extra-virgin olive oil
- 1 tbsp (15ml) fresh lemon juice
- 0.5 tsp (1g) Aleppo pepper
- 0.25 tsp (1.5g) sea salt
- 0.25 tsp (0.5g) cracked black pepper
- 0.25 cup (35g) fresh pomegranate seeds
- 1 tsp (5ml) extra-virgin olive oil
- fresh mint leaves
Instructions:
- Place the chopped walnuts in a dry skillet over medium heat. Stir frequently for 3–5 minutes until they smell nutty and turn a golden-brown hue, then remove from heat immediately.
- Place the pitted green olives in a fine-mesh strainer and rinse under cold water for 30 seconds, then pat dry with a paper towel.
- Finely mince the garlic and chop the parsley.
- In a small bowl, whisk together the pomegranate molasses, 2 tbsp olive oil, lemon juice, Aleppo pepper, salt, and black pepper until emulsified.
- In a medium bowl, toss together the rinsed olives, toasted walnuts, minced garlic, and chopped parsley.
- Pour the dressing over the olive mixture and toss until evenly coated.
- Garnish the dip with pomegranate seeds, a drizzle of olive oil, and fresh mint leaves.
