Ingredients:
- 2 cups (480 ml) whole milk
- 2/3 cup (130 g) granulated sugar
- 1/4 cup (30 g) cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3 large egg yolks
- 4 ripe bananas, sliced
- 1 1/2 cups (360 ml) heavy whipping cream
- 2 tablespoons (25 g) powdered sugar
- 1 teaspoon vanilla extract (for whipping cream)
- 1 package (about 12 oz or 340 g) vanilla wafers
Instructions:
- In a medium saucepan, whisk together the sugar, cornstarch, and salt.
- Gradually add the milk while whisking to combine.
- Heat over medium heat, whisking constantly until the mixture begins to thicken (around 10 minutes).
- In a separate bowl, lightly whisk the egg yolks. Temper the eggs by adding a small amount of the hot mixture to the yolks, then whisk back into the saucepan.
- Continue to cook the mixture for another 2-3 minutes until its thick and bubbling. Remove from heat and stir in the vanilla extract. Transfer to a bowl and allow it to cool slightly.
- In a mixing bowl, beat the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- In a trifle bowl or serving dish, layer half of the sliced bananas.
- Spoon half of the custard over the bananas, followed by half of the whipped cream.
- Repeat the layers with the remaining bananas, custard, and whipped cream.
- Cover with plastic wrap and refrigerate for at least 30 minutes before serving.
