Ingredients:

  • 2 cups (480 ml) whole milk
  • 2/3 cup (130 g) granulated sugar
  • 1/4 cup (30 g) cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 large egg yolks
  • 4 ripe bananas, sliced
  • 1 1/2 cups (360 ml) heavy whipping cream
  • 2 tablespoons (25 g) powdered sugar
  • 1 teaspoon vanilla extract (for whipping cream)
  • 1 package (about 12 oz or 340 g) vanilla wafers

Instructions:

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt.
  2. Gradually add the milk while whisking to combine.
  3. Heat over medium heat, whisking constantly until the mixture begins to thicken (around 10 minutes).
  4. In a separate bowl, lightly whisk the egg yolks. Temper the eggs by adding a small amount of the hot mixture to the yolks, then whisk back into the saucepan.
  5. Continue to cook the mixture for another 2-3 minutes until its thick and bubbling. Remove from heat and stir in the vanilla extract. Transfer to a bowl and allow it to cool slightly.
  6. In a mixing bowl, beat the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  7. In a trifle bowl or serving dish, layer half of the sliced bananas.
  8. Spoon half of the custard over the bananas, followed by half of the whipped cream.
  9. Repeat the layers with the remaining bananas, custard, and whipped cream.
  10. Cover with plastic wrap and refrigerate for at least 30 minutes before serving.
