Ingredients:

  • 3 cups Plain Greek Yoghurt
  • 3 Tbsp Honey or Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/8 tsp Salt
  • 1 cup Raspberries (fresh or frozen)
  • 1 cup Mango chunks (frozen recommended)
  • 2 large Kiwi Fruit
  • Small handful Baby Spinach
  • 1 cup Blueberries (fresh or frozen)
  • 2 tsp Fresh Lemon Juice
  • 1 cup Chopped Fresh Fruit (for garnish)
  • 1/4 cup Granola or Crushed Biscuits
  • 2 Tbsp Flavour Sprinkles (optional)

Instructions:

  1. Whisk the Base: In a mixing bowl, combine the Greek yoghurt, honey/maple syrup, vanilla extract, and salt. Whisk vigorously until smooth and slightly fluffy. Divide the mixture into two equal halves; set aside.
  2. Prepare the Red Purée: Place the raspberries into the blender with 1/2 teaspoon of lemon juice. Blend until completely smooth. Pass the purée through a fine-mesh sieve to remove seeds, then stir 1/4 of the reserved yoghurt base into the purée.
  3. Prepare the Yellow/Orange Purée: Place the mango chunks into the blender with 1/2 teaspoon of lemon juice. Blend until thick and smooth. Stir 1/4 of the reserved yoghurt base into the purée.
  4. Prepare the Green Purée: Combine the peeled kiwi, spinach, and 1/2 teaspoon of lemon juice in the blender. Blend until absolutely smooth and the spinach is fully incorporated. Do not add yoghurt to this one; keep it bright and concentrated.
  5. Prepare the Blue Purée: Place the blueberries into the blender with the remaining 1/2 teaspoon of lemon juice. Blend until smooth. Stir the remaining 1/2 of the reserved yoghurt base into the purée.
  6. Start the Foundation: Into each of the four serving bowls, spoon a layer of the plain, unmixed Greek yoghurt base (approximately 2 Tbsp per bowl). Tap gently on the counter to level the layer.
  7. Layer the Colours: Carefully spoon the coloured purées into the bowls, maintaining distinct layers. A suggested order: Blue Purée, Yellow/Orange Purée, Green Purée (the concentrated layer), and Red/Pink Purée.
  8. Chill to Set: Place the assembled bowls into the refrigerator for a minimum of 30 minutes to allow the layers to firm up slightly.
  9. Garnish: Just before serving, top the chilled bowls with a scattering of fresh chopped fruit, a sprinkling of granola or crushed biscuits for texture, and a light dusting of fun sprinkles, if desired.
  10. Serve Immediately: Enjoy the vibrant colours and refreshing textures!
