Ingredients:
- 1 (12-ounce) package vanilla wafers (about 60 wafers) (340g)
- 4 large eggs (200 g)
- ¾ cup (150g) granulated sugar
- 3 tablespoons (24g) all-purpose flour
- ¼ teaspoon salt (1.5g)
- 3 cups (710ml) whole milk
- 2 tablespoons (28g) unsalted butter
- 2 teaspoons vanilla extract (10 ml)
- 3-4 medium ripe bananas, sliced (approx 500g)
- Whipped cream, for topping (optional - about 1 cup or 240 ml)
- Extra vanilla wafers, crushed (optional), for garnish
Instructions:
- Whisk eggs, sugar, flour, and salt in a saucepan. Gradually whisk in milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Remove from heat; stir in butter and vanilla extract until smooth. Let cool slightly.
- Arrange a layer of vanilla wafers on the bottom of the baking dish.
- Spread a layer of banana pudding over the wafers. Top with a layer of sliced bananas.
- Repeat layers of wafers, pudding, and bananas until all ingredients are used, ending with a layer of pudding.
- Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the wafers to soften.
- Before serving, top with whipped cream (if using) and sprinkle with crushed vanilla wafers (if using).
