Ingredients:

  • 30 Chocolate Sandwich Biscuits (e.g., Oreos), whole cookie including filling
  • 4 Tbsp (56 g) Unsalted Butter, melted
  • 8 oz (225 g) full fat Cream Cheese, softened completely
  • 1 cup (120 g) Powdered Sugar, sifted
  • 1/3 cup (35 g) Unsweetened Cocoa Powder, Dutch Process, sifted
  • 1 tsp (5 ml) Vanilla Extract
  • 5 cups (360 ml) Heavy Whipping Cream (Double Cream), cold
  • 8 large Shortbread or Vanilla Wafer Cookies
  • 4 oz (115 g) Dark Chocolate Melting Wafers
  • 8-16 Gummy Worms or Candy Bugs
  • Optional: White Decorator Icing (Tube) for writing

Instructions:

  1. Process Biscuits: Place all 30 chocolate sandwich cookies into a food processor. Pulse until fine crumbs form. Drizzle the melted butter over the crumbs and pulse 3-4 times until the mixture resembles wet sand.
  2. Separate and Base: Reserve 1/3 of the crumb mixture for the topping. Divide the remaining 2/3 of the mixture equally among the 8 serving glasses/jars. Press lightly to form a compact base layer.
  3. Create the Tombstones: Melt the chocolate wafers gently. Dip the top half of each shortbread cookie into the melted chocolate. Place the dipped cookies on parchment paper to set. Optional: Once set, use white icing to pipe “RIP” or cross designs onto the chocolate section. Set aside.
  4. Whip Cream Cheese: In a large bowl, beat the softened cream cheese until it is light, fluffy, and completely smooth (3-4 minutes). Gradually beat in the powdered sugar, sifted cocoa powder, and vanilla extract until fully combined.
  5. Whip Cream: In a separate, chilled bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the chocolate/cream cheese mixture using a rubber spatula until just combined, maintaining the airy texture.
  6. Assemble and Chill: Spoon or pipe the chocolate mousse mixture evenly over the crumb base in the 8 serving glasses. Cover loosely and chill in the refrigerator for at least 2 hours, or until the mousse is firm and set.
  7. Garnish and Serve: Just before serving, sprinkle the reserved chocolate “dirt” over the top of the set mousse layer. Push one chocolate-dipped shortbread cookie into the back of each glass to serve as the tombstone. Arrange 1-2 gummy worms or candy bugs so they look like they are crawling out of the “dirt.” Serve immediately.
