  • 3 medium overripe bananas, mashed
  • 2 cups grated zucchini

Instructions:

  1. Preheat oven to 325°F (165°C). Line two 8x4-inch loaf pans with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, whisk the room-temperature eggs until frothy.
  3. Stir in the white sugar, brown sugar, oil, and vanilla extract.
  4. Fold in the mashed bananas and grated zucchini until the mixture is well-combined and velvety.
  5. Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture.
  6. Using a spatula, gently fold the ingredients together until no streaks of flour remain, taking care not to overmix.
  7. Divide the batter evenly between the two prepared 8x4-inch loaf pans.
  8. Bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
