Instructions:
- Preheat oven to 325°F (165°C). Line two 8x4-inch loaf pans with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, whisk the room-temperature eggs until frothy.
- Stir in the white sugar, brown sugar, oil, and vanilla extract.
- Fold in the mashed bananas and grated zucchini until the mixture is well-combined and velvety.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture.
- Using a spatula, gently fold the ingredients together until no streaks of flour remain, taking care not to overmix.
- Divide the batter evenly between the two prepared 8x4-inch loaf pans.
- Bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
