Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) sea salt
- 1 tsp (2g) ground cinnamon
- 3 large (350g) overripe bananas, mashed
- 0.5 cup (115g) unsalted butter, melted and cooled
- 0.5 cup (100g) light brown sugar, packed
- 0.25 cup (50g) granulated sugar
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- 0.75 cup (130g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick spray.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until no clumps remain.
- In a large bowl, mash the bananas until smooth.
- Stir the melted butter, brown sugar, and granulated sugar into the mashed bananas until combined.
- Whisk in the egg and vanilla extract until the batter looks glossy.
- Gently pour the dry ingredients into the wet ingredients.
- Using a spatula, fold the mixture together until just combined; stop while a few streaks of dry flour remain to avoid overmixing and maintain a tender crumb.
- Fold in chocolate chips or nuts if using.
- Fill each muffin cup about 3/4 full.
- Bake for 18–22 minutes, or until the tops are mahogany-colored and a toothpick inserted into the center comes out with a few moist crumbs.
