Ingredients:

  • 1 cup coarse sea salt (250 g)
  • Zest of 2 medium lemons (about 2 tablespoons or 30 g)
  • Zest of 2 medium limes (about 2 tablespoons or 30 g)
  • 1 teaspoon lemon juice (5 ml)
  • 1 teaspoon lime juice (5 ml)

Instructions:

  1. Using a zester or microplane, zest the lemons and limes into a mixing bowl, avoiding the bitter white pith.
  2. Add the coarse sea salt to the bowl with the citrus zest. Pour in the lemon juice and lime juice.
  3. Use a fork or spoon to thoroughly combine all ingredients until the zest is evenly distributed through the salt.
  4. Allow the mixture to sit for a few minutes to marry the flavors.
  5. Transfer the zesty salt into an airtight container
