Ingredients:

  • 12 large whole eggs
  • 1/4 cup heavy cream
  • 4 oz diced ham, cooked
  • 1/2 cup shredded sharp cheddar cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin with cooking spray or butter.
  2. In a large bowl, whisk the 12 large eggs with the 1/4 cup of heavy cream until well combined and slightly frothy. Season aggressively with salt and black pepper.
  3. Distribute the 4 oz of diced ham and 1/2 cup of shredded sharp cheddar cheese evenly among the 12 muffin cups. This should fill the base of each cup.
  4. Carefully pour the egg mixture into each muffin cup, filling them about three-quarters of the way full. Bake for 15 minutes, or until the tops are golden brown and the eggs are set and spring back lightly when touched.
  5. Allow the frittatas to cool in the muffin tin for 5 minutes before carefully removing them. Serve warm, or cool completely and store in an airtight container for meal prep.
