Ingredients:
- 12 large whole eggs
- 1/4 cup heavy cream
- 4 oz diced ham, cooked
- 1/2 cup shredded sharp cheddar cheese
- Salt, to taste
- Black pepper, to taste
Instructions:
- Preheat oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin with cooking spray or butter.
- In a large bowl, whisk the 12 large eggs with the 1/4 cup of heavy cream until well combined and slightly frothy. Season aggressively with salt and black pepper.
- Distribute the 4 oz of diced ham and 1/2 cup of shredded sharp cheddar cheese evenly among the 12 muffin cups. This should fill the base of each cup.
- Carefully pour the egg mixture into each muffin cup, filling them about three-quarters of the way full. Bake for 15 minutes, or until the tops are golden brown and the eggs are set and spring back lightly when touched.
- Allow the frittatas to cool in the muffin tin for 5 minutes before carefully removing them. Serve warm, or cool completely and store in an airtight container for meal prep.
