- 1 medium sweet potato (approx. 200-250g)

- 1 tablespoon butter, melted (optional)
- Drizzle of maple syrup (optional)

- Dollop of Greek yogurt (optional)
- Everything Bagel Seasoning (optional)
Instructions:
- Wash the sweet potato thoroughly.
- Using a fork or knife, pierce the sweet potato multiple times all over (6-8 pokes).
- Place the sweet potato on a microwave-safe plate. Microwave on high for 5-10 minutes, checking for doneness after 5 minutes. Cooking time depends on the size and the microwave power. Find your ideal microwave sweet potato time.
- The sweet potato is done when it's easily pierced with a fork or knife and feels soft when gently squeezed. If it's still firm, continue microwaving in 1-minute intervals until done.
- Let the sweet potato cool slightly before handling.
- Cut the sweet potato open lengthwise. Fluff the flesh with a fork. Add your favorite toppings and tuck in!
