Ingredients:

  • 1 lb ground beef (or turkey)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (10 oz) can cream of chicken soup (or cream of mushroom)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup crushed tortilla chips (for topping)
  • 2 tsp taco seasoning
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat. Add taco seasoning, salt, and pepper.
  3. In a large mixing bowl, combine the cooked meat, black beans, corn, diced tomatoes, cream of chicken soup, and sour cream. Mix until well combined.
  4. Spread the mixture evenly in the baking dish. Sprinkle shredded cheddar cheese on top. Add crushed tortilla chips as a topping.
  5. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  6. Allow to cool for a few minutes, then serve hot.
