Ingredients:
- 1 lb ground beef (or turkey)
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (10 oz) can cream of chicken soup (or cream of mushroom)
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 cup crushed tortilla chips (for topping)
- 2 tsp taco seasoning
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat. Add taco seasoning, salt, and pepper.
- In a large mixing bowl, combine the cooked meat, black beans, corn, diced tomatoes, cream of chicken soup, and sour cream. Mix until well combined.
- Spread the mixture evenly in the baking dish. Sprinkle shredded cheddar cheese on top. Add crushed tortilla chips as a topping.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden.
- Allow to cool for a few minutes, then serve hot.
