Ingredients:
- 4 ears of fresh sweet corn (approx. 800g)
- 1/2 cup mayonnaise (120ml)
- 1/4 cup sour cream (60ml)
- 1 lime, juiced (approximately 2 tablespoons or 30ml)
- 1 teaspoon chili powder (5g)
- 1/2 teaspoon garlic powder (2g)
- 1/2 teaspoon salt (2g)
- 1 cup crumbled feta cheese or cotija cheese (150g)
- 1/4 cup chopped fresh cilantro (optional; 15g)
- Additional lime wedges for serving
Instructions:
- Preheat your grill to medium-high heat (or bring a large pot of water to a boil).
- Remove husks and silk from the corn, and soak in water for about 10 minutes (optional for grilling).
- Cook corn: If grilling, place corn on grill and rotate every 2-3 minutes until charred (10-15 minutes). If boiling, add corn to boiling water and cook for 5-7 minutes until tender.
- While corn is cooking, prepare the sauce: In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, garlic powder, and salt. Mix well.
- Once corn is cooked, let cool slightly, then brush with the sauce using a basting brush.
- Generously sprinkle cheese over the corn, followed by fresh cilantro if using.
- Serve immediately with lime wedges on the side.
