Ingredients:

  • 2 lbs Sweet Potatoes (firm, uniform size)
  • 3 Tbsp Olive Oil
  • 2 Tbsp Pure Maple Syrup
  • 2 tsp Fresh Rosemary, finely chopped
  • 1 tsp Garlic Powder
  • 1 tsp Coarse Sea Salt
  • 1/2 tsp Freshly Ground Black Pepper

Instructions:

  1. Preheat oven to 425°F (220°C). Line a large, heavy-duty baking sheet with parchment paper if using.
  2. Peel the sweet potatoes and cut them into uniform 1-inch (2.5 cm) chunks. Ensure uniformity for even cooking.
  3. In a large mixing bowl, whisk together the salt, pepper, and garlic powder.
  4. Add the olive oil and maple syrup over the potato chunks. Add the chopped rosemary. Toss thoroughly until every piece is lightly coated.
  5. Spread the seasoned potatoes onto the prepared baking sheet in a single layer. Do not overcrowd the pan.
  6. Place the pan in the preheated oven and roast for 20 minutes.
  7. Remove the tray, use a spatula to flip the potatoes, and return to the oven for another 10–15 minutes, or until deeply golden brown and tender.
  8. Taste one potato for seasoning. Serve immediately while hot.
