Ingredients:
- 2 lbs Sweet Potatoes (firm, uniform size)
- 3 Tbsp Olive Oil
- 2 Tbsp Pure Maple Syrup
- 2 tsp Fresh Rosemary, finely chopped
- 1 tsp Garlic Powder
- 1 tsp Coarse Sea Salt
- 1/2 tsp Freshly Ground Black Pepper
Instructions:
- Preheat oven to 425°F (220°C). Line a large, heavy-duty baking sheet with parchment paper if using.
- Peel the sweet potatoes and cut them into uniform 1-inch (2.5 cm) chunks. Ensure uniformity for even cooking.
- In a large mixing bowl, whisk together the salt, pepper, and garlic powder.
- Add the olive oil and maple syrup over the potato chunks. Add the chopped rosemary. Toss thoroughly until every piece is lightly coated.
- Spread the seasoned potatoes onto the prepared baking sheet in a single layer. Do not overcrowd the pan.
- Place the pan in the preheated oven and roast for 20 minutes.
- Remove the tray, use a spatula to flip the potatoes, and return to the oven for another 10–15 minutes, or until deeply golden brown and tender.
- Taste one potato for seasoning. Serve immediately while hot.
