Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 cup / 225g)
  • 1/2 cup pure maple syrup (170g)
  • 1/3 cup melted coconut oil (80ml)
  • 1 large egg (50g)
  • 1 tsp pure vanilla extract (5ml)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (3g)
  • 1 tsp ground cinnamon (2g)
  • 1/2 cup chopped walnuts (60g)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.
  2. In a large bowl, mash the bananas with a fork until mostly smooth.
  3. Whisk in the maple syrup, melted coconut oil, egg, and vanilla extract until the mixture is emulsified and glossy.
  4. Add the flour, baking soda, salt, and cinnamon directly into the wet mixture.
  5. Using a spatula, fold the ingredients together until just combined; do not over-mix.
  6. Gently fold in the chopped walnuts.
  7. Divide the batter evenly among the 12 muffin cups.
  8. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 5 minutes before transferring to a wire rack.
