Ingredients:
- 3 large overripe bananas, mashed (approx. 1 cup / 225g)
- 1/2 cup pure maple syrup (170g)
- 1/3 cup melted coconut oil (80ml)
- 1 large egg (50g)
- 1 tsp pure vanilla extract (5ml)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 1 tsp ground cinnamon (2g)
- 1/2 cup chopped walnuts (60g)
Instructions:
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.
- In a large bowl, mash the bananas with a fork until mostly smooth.
- Whisk in the maple syrup, melted coconut oil, egg, and vanilla extract until the mixture is emulsified and glossy.
- Add the flour, baking soda, salt, and cinnamon directly into the wet mixture.
- Using a spatula, fold the ingredients together until just combined; do not over-mix.
- Gently fold in the chopped walnuts.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack.
