Ingredients:

  • 10 oz spring mix or spinach
  • 22 oz canned mandarin oranges, drained
  • 0.25 small red onion, shaved paper-thin
  • 0.5 cup crumbled feta cheese
  • 0.5 cup sliced almonds, toasted
  • 0.33 cup dried cranberries
  • 0.5 cup extra virgin olive oil
  • 0.25 cup apple cider vinegar
  • 2 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions:

  1. In a small skillet over medium heat, lightly toast the sliced almonds for 3 minutes until fragrant and golden brown. Set aside to cool.
  2. Prepare the dressing by combining the extra virgin olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper in a mason jar. Seal the lid and shake vigorously for 30 seconds until fully emulsified.
  3. Place the spring mix or spinach in a large salad bowl.
  4. Add the drained mandarin oranges, thinly sliced red onions, and dried cranberries to the bowl.
  5. Drizzle the dressing over the salad and toss gently to ensure even coating without bruising the greens.
  6. Top with the crumbled feta cheese and toasted sliced almonds just before serving to maintain maximum crunch.
