- 10 oz spring mix or spinach
- 22 oz canned mandarin oranges, drained
- 0.25 small red onion, shaved paper-thin
- 0.5 cup crumbled feta cheese
- 0.5 cup sliced almonds, toasted
- 0.33 cup dried cranberries
- 0.5 cup extra virgin olive oil
- 0.25 cup apple cider vinegar
- 2 tbsp honey or maple syrup
- 1 tsp Dijon mustard
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions:
- In a small skillet over medium heat, lightly toast the sliced almonds for 3 minutes until fragrant and golden brown. Set aside to cool.

- Place the spring mix or spinach in a large salad bowl.
- Add the drained mandarin oranges, thinly sliced red onions, and dried cranberries to the bowl.
