Ingredients:
- 4 cups mixed salad greens (e.g., spinach, arugula, and romaine) (about 120g)
- 1 can (11 oz / 310g) mandarin oranges, drained
- ½ cup (75g) sliced almonds, toasted
- ¼ cup (40g) red onion, thinly sliced
- ½ cup (75g) crumbled feta cheese (optional)
- ¼ cup (60ml) olive oil
- 2 tablespoons (30ml) apple cider vinegar
- 1 tablespoon (15ml) honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
- Wash and dry the mixed salad greens. Tear larger leaves into bite-sized pieces.
- In a large mixing bowl, combine the mixed greens, mandarin oranges, sliced almonds, and red onion. If using, add the crumbled feta cheese.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until emulsified.
- Pour the dressing over the salad mixture. Gently toss to combine all ingredients without bruising the greens.
- Transfer the salad to a serving bowl or platter and enjoy immediately.
