Ingredients:

  • 4 cups mixed salad greens (e.g., spinach, arugula, and romaine) (about 120g)
  • 1 can (11 oz / 310g) mandarin oranges, drained
  • ½ cup (75g) sliced almonds, toasted
  • ¼ cup (40g) red onion, thinly sliced
  • ½ cup (75g) crumbled feta cheese (optional)
  • ¼ cup (60ml) olive oil
  • 2 tablespoons (30ml) apple cider vinegar
  • 1 tablespoon (15ml) honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Wash and dry the mixed salad greens. Tear larger leaves into bite-sized pieces.
  2. In a large mixing bowl, combine the mixed greens, mandarin oranges, sliced almonds, and red onion. If using, add the crumbled feta cheese.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until emulsified.
  4. Pour the dressing over the salad mixture. Gently toss to combine all ingredients without bruising the greens.
  5. Transfer the salad to a serving bowl or platter and enjoy immediately.
