Ingredients:
- 6 Large Eggs
- 1 Large bowl of ice water
- 4 slices Thick-cut Streaky Bacon
- 1/4 cup Full-fat Mayonnaise
- 1 tsp Dijon Mustard
- 1/2 tsp Apple Cider Vinegar
- 1/4 tsp Flaky Sea Salt, plus more to taste
- 1/8 tsp Black Pepper, freshly ground
- 2 medium Roma or Grape Tomatoes, seeded and finely diced
- 1/4 cup Iceberg or Romaine Lettuce, finely shredded (chiffonade)
- 1 tsp Fresh Chives, finely minced (optional)
Instructions:
- Prepare the Eggs: Hard-boil the eggs using your preferred method. Immediately plunge them into the prepared ice bath for at least 10 minutes to halt the cooking process.
- Peel, Halve, and Separate: Gently peel the cooled eggs and slice them cleanly in half lengthwise. Scoop the cooked yolks into a medium mixing bowl and place the empty whites onto your serving platter.
- Crisp the Bacon: Cook the streaky bacon until very crisp. Drain well and finely chop or crumble the bacon. Reserve 2 tablespoons for the final garnish and set aside the rest.
- Prepare the Tomatoes: Finely dice the tomatoes, removing the watery seeds and central pulp. Blot excess moisture with a paper towel. Reserve half (approximately 2 Tbsp) for the final garnish and set aside the other half to be mixed into the filling.
- Mash the Yolks: Mash the reserved yolks thoroughly using a fork until a fine, crumbly consistency is achieved. (For an ultra-smooth filling, push the yolks through a fine mesh sieve.)
- Build the Base: Add the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper to the yolks. Mix until completely smooth and creamy. Taste and adjust seasoning.
- Fold in the Load: Gently fold in the unreserved crumbled bacon and the unreserved diced tomato (approximately 2 tablespoons total). Do not overmix.
- Fill the Whites: Transfer the filling mixture to a piping bag (or use a spoon). Pipe the mixture neatly back into the empty egg white cavities, creating a decorative mound.
- Garnish and Serve: Just before serving, sprinkle the top of each deviled egg with the reserved crispy bacon crumbles and diced tomato. Lightly place a small nest of finely shredded lettuce and minced chives (if using) on top. Serve chilled.
