Ingredients:

  • 4 cups Fresh Peaches, peeled and sliced
  • 1 cup All-Purpose Flour
  • 3/4 cup Granulated Sugar (divided)
  • 1 cup Whole Milk, cold
  • 8 tablespoons Unsalted Butter (1 stick)
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground Cinnamon

Instructions:

  1. Preheat your oven to 375°F (190°C). Place the 8 tablespoons of unsalted butter into a 9x13 inch baking dish (or equivalent) and set the dish in the oven while it preheats until the butter is completely melted.
  2. In a medium bowl, combine the sliced peaches with 1/4 cup of the granulated sugar. Gently stir and set aside to allow the peaches to release their juices.
  3. In a separate large bowl, whisk together the all-purpose flour, the remaining 1/2 cup of granulated sugar, baking powder, salt, and ground cinnamon until well combined.
  4. Pour the cold whole milk into the dry mixture and stir gently until just combined. Do not overmix; a few lumps are fine.
  5. Carefully remove the baking dish containing the hot melted butter from the oven. Pour the prepared batter mixture evenly over the melted butter in the dish. DO NOT STIR.
  6. Spoon the sugared peaches gently over the top of the batter. The fruit should sit mostly on top, and the batter will rise around it during baking.
  7. Bake for 40 minutes, or until the topping is golden brown, the crust is set, and the fruit mixture is bubbling thickly around the edges.
  8. Allow the cobbler to cool slightly (about 10-15 minutes) before serving warm.
