Ingredients:
- 4 cups Fresh Peaches, peeled and sliced
- 1 cup All-Purpose Flour
- 3/4 cup Granulated Sugar (divided)
- 1 cup Whole Milk, cold
- 8 tablespoons Unsalted Butter (1 stick)
- 1 tablespoon Baking Powder
- 1/2 teaspoon Salt
- 1 teaspoon Ground Cinnamon
Instructions:
- Preheat your oven to 375°F (190°C). Place the 8 tablespoons of unsalted butter into a 9x13 inch baking dish (or equivalent) and set the dish in the oven while it preheats until the butter is completely melted.
- In a medium bowl, combine the sliced peaches with 1/4 cup of the granulated sugar. Gently stir and set aside to allow the peaches to release their juices.
- In a separate large bowl, whisk together the all-purpose flour, the remaining 1/2 cup of granulated sugar, baking powder, salt, and ground cinnamon until well combined.
- Pour the cold whole milk into the dry mixture and stir gently until just combined. Do not overmix; a few lumps are fine.
- Carefully remove the baking dish containing the hot melted butter from the oven. Pour the prepared batter mixture evenly over the melted butter in the dish. DO NOT STIR.
- Spoon the sugared peaches gently over the top of the batter. The fruit should sit mostly on top, and the batter will rise around it during baking.
- Bake for 40 minutes, or until the topping is golden brown, the crust is set, and the fruit mixture is bubbling thickly around the edges.
- Allow the cobbler to cool slightly (about 10-15 minutes) before serving warm.
