Ingredients:
- 4 (6-8 ounce) cod fillets, skin on or off (approximately 170-225g each)
- 2 tablespoons olive oil (30ml)
- 2 lemons, zested and juiced (Use 1 tbsp of lemon juice approx. 15 ml)
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped (30ml)
- 1 tablespoon fresh thyme, chopped (15ml)
- 1/2 teaspoon dried oregano (2.5ml)
- 1/4 teaspoon red pepper flakes (optional) (1.25 ml)
- Salt and freshly ground black pepper to taste
- Lemon wedges, for serving
Instructions:
- Preheat oven to 400°F (200°C).
- Lightly grease the baking dish with olive oil or cooking spray.
- In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, parsley, thyme, oregano, and red pepper flakes (if using). Season with salt and pepper.
- Place cod fillets in the prepared baking dish. Drizzle the lemon-herb mixture evenly over each fillet, ensuring they are well coated.
- Bake in the preheated oven for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
