Ingredients:

  • 4 (6-8 ounce) cod fillets, skin on or off (approximately 170-225g each)
  • 2 tablespoons olive oil (30ml)
  • 2 lemons, zested and juiced (Use 1 tbsp of lemon juice approx. 15 ml)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (30ml)
  • 1 tablespoon fresh thyme, chopped (15ml)
  • 1/2 teaspoon dried oregano (2.5ml)
  • 1/4 teaspoon red pepper flakes (optional) (1.25 ml)
  • Salt and freshly ground black pepper to taste
  • Lemon wedges, for serving

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Lightly grease the baking dish with olive oil or cooking spray.
  3. In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, parsley, thyme, oregano, and red pepper flakes (if using). Season with salt and pepper.
  4. Place cod fillets in the prepared baking dish. Drizzle the lemon-herb mixture evenly over each fillet, ensuring they are well coated.
  5. Bake in the preheated oven for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
