Ingredients:

  • 1.5 pounds (680g) Tilapia fillets, skin on or off, patted dry
  • 2 tablespoons (30ml) Olive oil, extra virgin
  • 2 cloves Garlic, minced (about 1 teaspoon)
  • 1/4 cup (15g) Fresh parsley, chopped
  • 1/4 cup (15g) Fresh oregano, chopped
  • 1 Lemon, juiced (about 2-3 tablespoons or 30-45ml) and zested (about 1 teaspoon)
  • 1/4 teaspoon Red pepper flakes (optional, for a little kick)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine olive oil, minced garlic, parsley, oregano, lemon juice, lemon zest, red pepper flakes (if using), salt, and pepper.
  3. Place Tilapia fillets in the baking dish.
  4. Evenly spread the herb mixture over the Tilapia fillets, ensuring they are well coated.
  5. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  6. Let the fish rest for a couple of minutes before serving.
