- 1.5 lbs (680g) mahi-mahi fillets, about 1-inch thick, skin off
- 2 tablespoons (30ml) olive oil
- 2 tablespoons (30g) unsalted butter, melted
- 2 lemons, one zested and juiced (about 2 tablespoons juice), one sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs, chopped (such as parsley, thyme, and chives)
- 1/2 teaspoon (2.5ml) salt
- 1/4 teaspoon (1.25ml) black pepper
Instructions:
- Preheat oven to 400°F (200°C).
- Pat the mahi-mahi fillets dry with paper towels. Place them in the baking dish.
- In a small bowl, combine olive oil, melted butter, lemon zest, lemon juice, minced garlic, chopped herbs, salt, and pepper. Whisk well.
- Pour the lemon herb sauce evenly over the mahi-mahi fillets, ensuring they are well coated.
- Arrange lemon slices around the fish fillets. Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. Visual cue: the fish will turn from translucent to white and will easily break apart with a fork. Internal temperature should reach 145°F (63°C).
- Remove from oven and serve immediately.
