Ingredients:
- 2 large Ripe Hass Avocados
- 1/2 tsp Coarse Sea Salt, divided
- 1/4 tsp Freshly Ground Black Pepper, divided
- 1/4 cup Pre-Cooked Bacon Crumbles
- 2 Tbsp Full-Fat Mayonnaise
- 1/2 cup Sharp Cheddar Cheese, grated (divided)
- 1/4 tsp Dried Chilli Flakes (optional)
- 1 tsp Lemon Juice (freshly squeezed)
Instructions:
- Preheat the oven or air fryer to 400°F (200°C). Line a small baking sheet with parchment paper.
- Slice the avocados in half lengthwise and remove the pits. Gently scoop out approximately 1/4 to 1/3 of the avocado flesh from the center of each half to create a larger 'boat' shape. Leave a good 1/2-inch wall for structure. Season the insides of the four halves lightly with a pinch of salt and pepper. Place them onto the prepared baking sheet.
- In a small mixing bowl, combine the pre-cooked bacon crumbles, 1/4 cup of the grated cheddar cheese, chilli flakes (if using), mayonnaise, and lemon juice. Stir until everything is evenly combined and the mixture is thick and moist.
- Spoon the cheesy bacon mixture evenly into the four prepared avocado cavities, mounding the filling slightly on top.
- Sprinkle the remaining 1/4 cup of cheddar cheese over the top of the filled avocados.
- Bake for 12–15 minutes, or until the cheese is melted, golden brown, and bubbling enthusiastically. Serve immediately while hot.
