Ingredients:

  • 2 large Ripe Hass Avocados
  • 1/2 tsp Coarse Sea Salt, divided
  • 1/4 tsp Freshly Ground Black Pepper, divided
  • 1/4 cup Pre-Cooked Bacon Crumbles
  • 2 Tbsp Full-Fat Mayonnaise
  • 1/2 cup Sharp Cheddar Cheese, grated (divided)
  • 1/4 tsp Dried Chilli Flakes (optional)
  • 1 tsp Lemon Juice (freshly squeezed)

Instructions:

  1. Preheat the oven or air fryer to 400°F (200°C). Line a small baking sheet with parchment paper.
  2. Slice the avocados in half lengthwise and remove the pits. Gently scoop out approximately 1/4 to 1/3 of the avocado flesh from the center of each half to create a larger 'boat' shape. Leave a good 1/2-inch wall for structure. Season the insides of the four halves lightly with a pinch of salt and pepper. Place them onto the prepared baking sheet.
  3. In a small mixing bowl, combine the pre-cooked bacon crumbles, 1/4 cup of the grated cheddar cheese, chilli flakes (if using), mayonnaise, and lemon juice. Stir until everything is evenly combined and the mixture is thick and moist.
  4. Spoon the cheesy bacon mixture evenly into the four prepared avocado cavities, mounding the filling slightly on top.
  5. Sprinkle the remaining 1/4 cup of cheddar cheese over the top of the filled avocados.
  6. Bake for 12–15 minutes, or until the cheese is melted, golden brown, and bubbling enthusiastically. Serve immediately while hot.
