Ingredients:

  • 1 cup (100 g) Aged Parmesan Cheese, freshly grated
  • 1/4 tsp Freshly Ground Black Pepper (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone baking mat. Do not use cooking spray.
  2. Using a fine grater, freshly grate the aged Parmesan cheese. Lightly toss the grated cheese with the black pepper, if using.
  3. Using a 1-teaspoon measuring spoon, drop small, level mounds of the grated cheese onto the prepared baking sheet, ensuring mounds are spaced at least 2 inches (5 cm) apart.
  4. Bake for 6 to 8 minutes. Monitor closely; the crisps are done when the centers are bubbly and the edges are a deep, uniform golden brown.
  5. Remove the baking sheet from the oven and allow the crisps to cool completely on the sheet for about 3 to 5 minutes until they transition from flexible to brittle.
  6. Gently lift the cooled Parmesan Crisps off the sheet using a thin spatula. Store cooled crisps in an airtight container at room temperature.
