Ingredients:
- 1 lb lean ground beef (93/7 ratio)
- 1 tbsp toasted sesame oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 0.5 tsp crushed red pepper flakes
- 0.25 cup low-sodium soy sauce
- 1 tbsp Gochujang (Korean red chili paste)
- 1 tbsp raw honey
- 1 tbsp rice vinegar
- 2 cups cooked jasmine rice
- 2 cups broccoli florets
- 2 green onions, thinly sliced
- 1 tsp toasted sesame seeds
Instructions:
- Heat sesame oil in a large cast iron skillet over medium-high heat. Add ground beef and break into large chunks; let sear undisturbed for 3 minutes until a deep crust forms.
- Break beef into smaller crumbles. Add minced garlic, grated ginger, and red pepper flakes. Sauté for 1 minute until aromatic.
- In a small bowl, whisk soy sauce, gochujang, honey, and rice vinegar. Pour over the beef and stir to coat. Simmer for 2 minutes until the sauce reduces into a thick glaze.
- Assemble the bowls by layering 0.5 cup jasmine rice, a portion of the glazed beef, and steamed broccoli. Garnish with sliced green onions and sesame seeds.
