Ingredients:

  • 1 pound (454g) ground beef (80/20 blend recommended)
  • 1 ounce (28g) Taco Seasoning Packet (like Old El Paso)
  • ½ cup (120ml) water
  • 8 (6-inch / 15cm) flour tortillas
  • 2 tablespoons (30ml) vegetable oil (or canola oil)
  • 8 ounces (227g) tomato sauce
  • 1 tablespoon (15ml) Taco Seasoning Packet
  • 2 cups (227g) shredded cheddar cheese
  • ½ cup (60g) diced tomatoes
  • ¼ cup (15g) sliced green onions

Instructions:

  1. Brown the ground beef in a large skillet. Drain off any excess fat. Stir in taco seasoning and water. Simmer until liquid is absorbed.
  2. In a small saucepan, combine the tomato sauce and taco seasoning. Heat gently until warmed through.
  3. Brush both sides of the tortillas with vegetable oil. Bake on a baking sheet at 375°F (190°C) for 5-7 minutes per side, or until golden brown and crispy.
  4. Spread a thin layer of the seasoned tomato sauce on four of the crispy tortillas. Top with half of the cooked ground beef and one cup of shredded cheddar cheese.
  5. Place the remaining crispy tortillas on top of the cheese. Spread the remaining tomato sauce on the top tortillas. Sprinkle with remaining ground beef, remaining cheddar cheese, diced tomatoes, and green onions.
  6. Return to the oven and bake for 5-8 minutes, or until the cheese is melted and bubbly. Let stand for 5 minutes before serving.
