Ingredients:
- 4 medium sweet potatoes, peeled and cubed
- 2 tablespoons unsalted butter
- 1/4 cup maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- Salt to taste
- 1 cup pecans, chopped and toasted
- 1/4 cup maple syrup
- 2 tablespoons brown sugar
- 1 tablespoon unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions:
- Peel and cube sweet potatoes.
- Boil sweet potatoes in salted water until tender, about 15-20 minutes.
- Drain sweet potatoes and return to pot. Add butter, maple syrup, cinnamon, nutmeg, and salt. Mash until smooth.
- In a separate bowl, mix toasted pecans, maple syrup, brown sugar, melted butter, and vanilla extract until combined.
- Preheat oven to 350°F (175°C). Spread the mashed sweet potato mixture evenly in a baking dish. Sprinkle the pecan topping over the sweet potato layer.
- Bake in the preheated oven for 25-30 minutes, until golden and bubbly. Allow to cool slightly before serving.
