Ingredients:

  • 4 medium sweet potatoes, peeled and cubed
  • 2 tablespoons unsalted butter
  • 1/4 cup maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • Salt to taste
  • 1 cup pecans, chopped and toasted
  • 1/4 cup maple syrup
  • 2 tablespoons brown sugar
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions:

  1. Peel and cube sweet potatoes.
  2. Boil sweet potatoes in salted water until tender, about 15-20 minutes.
  3. Drain sweet potatoes and return to pot. Add butter, maple syrup, cinnamon, nutmeg, and salt. Mash until smooth.
  4. In a separate bowl, mix toasted pecans, maple syrup, brown sugar, melted butter, and vanilla extract until combined.
  5. Preheat oven to 350°F (175°C). Spread the mashed sweet potato mixture evenly in a baking dish. Sprinkle the pecan topping over the sweet potato layer.
  6. Bake in the preheated oven for 25-30 minutes, until golden and bubbly. Allow to cool slightly before serving.
